What We Learned Baking Bread All Winter

An arrangement of fresh ingredients including chickpeas, radishes, peppers, and tofu on a cutting board.

Notes from three months of loaves: hydration, patience, and the myth of the perfect crumb.

There is a particular kind of cooking that rewards attention without demanding it. You get things going, you step away, and the kitchen does the rest.

We keep coming back to the same handful of techniques because they work, and because they leave room for whatever the season happens to be offering.

A few notes from the counter

None of this is precious. Good cooking at home is mostly about showing up, tasting as you go, and trusting that a few honest ingredients will carry the day.

If you take one thing from this, let it be this: season early, season often, and taste before you reach for anything else.

The pond house kitchen is not a test kitchen. It is a real one, with a crowded counter and a dog underfoot, and everything here has been cooked that way.
