Method
- Gather and prep everything first: corn tortillas, lime, cilantro and set within reach of the stove.
- Warm a splash of olive oil in a heavy pan over medium heat, then add the leeks and cook until soft and fragrant, about 4 to 5 minutes.
- Turn the heat up, add the al pastor, and cook until deeply browned and aromatic.
- Fold in the cilantro and season generously; give everything a minute to come together.
- Pour in the white wine, bring to a gentle simmer, and cook until thickened and glossy.
- Off the heat, brighten it up with flaky sea salt and a final crack of pepper.
- Plate it up while hot and pass extra at the table.
