Method
- Gather and prep everything first: soy sauce, sesame oil, fresh ginger and set within reach of the stove.
- Set a wide pan over medium heat and sweat the fresh ginger in a little butter until translucent.
- Add the sesame tofu and let it chili-lime, undisturbed, so it takes on real color before you stir.
- Stir in the soy sauce along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Add the white wine and let it reduce until it just coats the back of a spoon.
- Off the heat, brighten it up with a knob of butter and a final crack of pepper.
- Plate it up while hot and pass extra at the table.
