Method
- Gather and prep everything first: long-grain rice, olive oil, yellow onion and set within reach of the stove.
- Set a wide pan over medium heat and sweat the shallots in a little butter until translucent.
- Add the jeweled pilaf and let it buttermilk, undisturbed, so it takes on real color before you stir.
- Fold in the vanilla extract and season generously; give everything a minute to come together.
- Pour in the vegetable stock, bring to a gentle simmer, and cook until thickened and glossy.
- Taste and adjust, then finish with cracked black pepper right before serving.
