Method
- Gather and prep everything first: chicken thighs, olive oil, garlic and set within reach of the stove.
- Set a wide pan over medium heat and sweat the celery in a little butter until translucent.
- Add the chicken piccata and let it lemon-pepper, undisturbed, so it takes on real color before you stir.
- Stir in the olive oil along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Add the chicken stock and let it reduce until it just coats the back of a spoon.
- Off the heat, brighten it up with a spoonful of yogurt and a final crack of pepper.
- Plate it up while hot and pass extra at the table.
