Method
- Gather and prep everything first: dried pasta, olive oil, garlic and set within reach of the stove.
- Warm a splash of olive oil in a heavy pan over medium heat, then add the garlic and cook until soft and fragrant, about 4 to 5 minutes.
- Add the cacio e pepe and let it chili-lime, undisturbed, so it takes on real color before you stir.
- Fold in the fresh corn and season generously; give everything a minute to come together.
- Pour in the crushed tomatoes, bring to a gentle simmer, and cook until thickened and glossy.
- Off the heat, brighten it up with a knob of butter and a final crack of pepper.
- Serve warm, ideally with something to soak up the sauce.
