Method
- Gather and prep everything first: mixed greens, olive oil, lemon and set within reach of the stove.
- Set a wide pan over medium heat and sweat the fresh ginger in a little butter until translucent.
- Turn the heat up, add the charred corn, and cook until deeply browned and aromatic.
- Stir in the fish sauce along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Pour in the crushed tomatoes, bring to a gentle simmer, and cook until thickened and glossy.
- Off the heat, brighten it up with cracked black pepper and a final crack of pepper.
- Plate it up while hot and pass extra at the table.
