Method
- Gather and prep everything first: all-purpose flour, instant yeast, kosher salt and set within reach of the stove.
- Set a wide pan over medium heat and sweat the leeks in a little butter until translucent.
- Add the cornbread and let it honey-glazed, undisturbed, so it takes on real color before you stir.
- Stir in the instant yeast along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Add the crushed tomatoes and let it reduce until it just coats the back of a spoon.
- Off the heat, brighten it up with a drizzle of olive oil and a final crack of pepper.
- Plate it up while hot and pass extra at the table.
