Method
- Start by prepping your soy sauce, sesame oil, fresh ginger so the cooking goes quickly.
- Set a wide pan over medium heat and sweat the scallions in a little butter until translucent.
- Turn the heat up, add the char siu, and cook until deeply browned and aromatic.
- Stir in the kosher salt along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Pour in the white wine, bring to a gentle simmer, and cook until thickened and glossy.
- Taste and adjust, then finish with cracked black pepper right before serving.
- Plate it up while hot and pass extra at the table.
