Method
- Gather and prep everything first: pizza dough, olive oil, mozzarella and set within reach of the stove.
- Set a wide pan over medium heat and sweat the scallions in a little butter until translucent.
- Turn the heat up, add the margherita, and cook until deeply browned and aromatic.
- Stir in the black pepper along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Add the chicken stock and let it reduce until it just coats the back of a spoon.
- Off the heat, brighten it up with a grating of hard cheese and a final crack of pepper.
- Serve warm, ideally with something to soak up the sauce.
