Method
- Start by prepping your long-grain rice, olive oil, yellow onion so the cooking goes quickly.
- Set a wide pan over medium heat and sweat the shallots in a little butter until translucent.
- Add the jeweled pilaf and let it sheet-pan, undisturbed, so it takes on real color before you stir.
- Stir in the garlic along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Add the chicken stock and let it reduce until it just coats the back of a spoon.
- Taste and adjust, then finish with a squeeze of lemon right before serving.
- Serve warm, ideally with something to soak up the sauce.
