Method
- Gather and prep everything first: corn tortillas, lime, cilantro and set within reach of the stove.
- Set a wide pan over medium heat and sweat the celery in a little butter until translucent.
- Add the enchilada and let it skillet, undisturbed, so it takes on real color before you stir.
- Fold in the ground cumin and season generously; give everything a minute to come together.
- Add the white wine and let it reduce until it just coats the back of a spoon.
- Taste and adjust, then finish with toasted nuts right before serving.
- Serve warm, ideally with something to soak up the sauce.
