Method
- Start by prepping your olive oil, garlic, smoked paprika so the cooking goes quickly.
- Set a wide pan over medium heat and sweat the fresh ginger in a little butter until translucent.
- Turn the heat up, add the burnt end, and cook until deeply browned and aromatic.
- Fold in the brown sugar and season generously; give everything a minute to come together.
- Add the crushed tomatoes and let it reduce until it just coats the back of a spoon.
- Off the heat, brighten it up with a drizzle of olive oil and a final crack of pepper.
- Serve warm, ideally with something to soak up the sauce.
