Method
- Start by prepping your yellow onion, garlic, vegetable stock so the cooking goes quickly.
- Set a wide pan over medium heat and sweat the fresh ginger in a little butter until translucent.
- Add the french onion and let it weeknight, undisturbed, so it takes on real color before you stir.
- Stir in the star anise along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Add the crushed tomatoes and let it reduce until it just coats the back of a spoon.
- Taste and adjust, then finish with a squeeze of lemon right before serving.
- Serve warm, ideally with something to soak up the sauce.
