Method
- Start by prepping your all-purpose flour, instant yeast, kosher salt so the cooking goes quickly.
- Warm a splash of olive oil in a heavy pan over medium heat, then add the fresh ginger and cook until soft and fragrant, about 4 to 5 minutes.
- Turn the heat up, add the sourdough, and cook until deeply browned and aromatic.
- Stir in the black pepper along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Add the coconut milk and let it reduce until it just coats the back of a spoon.
- Taste and adjust, then finish with a grating of hard cheese right before serving.
- Serve warm, ideally with something to soak up the sauce.
