Method
- Gather and prep everything first: soy sauce, sesame oil, fresh ginger and set within reach of the stove.
- Set a wide pan over medium heat and sweat the leeks in a little butter until translucent.
- Add the char siu and let it sun-dried-tomato, undisturbed, so it takes on real color before you stir.
- Fold in the fresh ginger and season generously; give everything a minute to come together.
- Add the white wine and let it reduce until it just coats the back of a spoon.
- Taste and adjust, then finish with a drizzle of olive oil right before serving.
- Plate it up while hot and pass extra at the table.
