Method
- Start by prepping your long-grain rice, olive oil, yellow onion so the cooking goes quickly.
- Set a wide pan over medium heat and sweat the celery in a little butter until translucent.
- Add the farro and let it tahini, undisturbed, so it takes on real color before you stir.
- Stir in the zucchini along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Pour in the chicken stock, bring to a gentle simmer, and cook until thickened and glossy.
- Off the heat, brighten it up with a drizzle of olive oil and a final crack of pepper.
- Serve warm, ideally with something to soak up the sauce.
