Method
- Start by prepping your dried pasta, olive oil, garlic so the cooking goes quickly.
- Set a wide pan over medium heat and sweat the celery in a little butter until translucent.
- Add the pesto and let it crispy, undisturbed, so it takes on real color before you stir.
- Stir in the ripe tomatoes along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Add the crushed tomatoes and let it reduce until it just coats the back of a spoon.
- Taste and adjust, then finish with a drizzle of olive oil right before serving.
- Serve warm, ideally with something to soak up the sauce.
