Method
- Start by prepping your dried pasta, olive oil, garlic so the cooking goes quickly.
- Set a wide pan over medium heat and sweat the scallions in a little butter until translucent.
- Add the brown butter sage and let it ginger-scallion, undisturbed, so it takes on real color before you stir.
- Stir in the olive oil along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Off the heat, brighten it up with toasted nuts and a final crack of pepper.
- Plate it up while hot and pass extra at the table.
